Pectic Enzyme (ENZ110) is recommended for all fresh fruit wines. Add the Pectic Enzyme to the juice prior to the fermentation process in order to enhance the clarification process. The Pectic Enzyme destroys haze-causing pectin cells that can leave a wine with a permanent milky appearance known as a “pectin haze”. You can also add Pectic Enzyme to crushed fruit to increase the extraction of body and color from the pulp during the primary fermentation and pressing. All fruits have pectin and it’s the milky gel that holds a fruit’s fiber together, trapping the fruit’s character within. This is why we recommend using Pectic Enzyme any time you are dealing with fresh fruits. This Pectic Enzyme will allow the character of the fruit to be extracted into the wine. This comes in liquid form and with complete directions (see below). Each 1-ounce bottle is sufficient for treating 45 gallons of wine.

Directions: Use 1/8 teaspoon of Pectic Enzyme for every gallon of juice/pulp at the beginning of fermentation. Twice the amount may be needed if it is added later in the process.

Ingredients: Pectinase (CAS 9032-75-1), sorbitol (CAS 98201-93-5), glycerine (CAS 8013-25-0) and sodium benzoate (CAS 65-85-0)

Can I use the pectin you get at the grocery store instead of pectic enzyme?
No, you can`t. The pectin you get at the grocery store is the opposite of pectic enzyme. Pectic Enzyme takes pectin out, whereas the pectin from the grocery store adds pectin.

I have used this liquid pectic enzyme and powdered pectic enzyme from another store for my wines over the years. The liquid pectic enzyme seems to do a good job at breaking down the pectin since generally my wines end up clear. I like the liquid version because I know that the pectin enzyme is resuspended in the liquid properly.

I find no need to filter the wine when using this in the process. Sediment settles easily at the bottom and the wine always sparkles.
