Must be used if sweetening your wines or if your wines tend to come out sweet. This product is a yeast growth inhibitor, but it will not stop a fermentation in progress. Its effectiveness lies in its ability to keep a wine from starting to ferment again after it has already stopped. This situation can happen, for example, when bottling a sweet wine that has completely stopped fermenting in the winter, only to find that on the first warm day of spring it starts to ferment in the bottles.
If you do not intend to sweeten your finished wine 1/4 teaspoon per gallon is sufficient. If you want to sweeten your wine or if the wine tastes sweet, 1/2 teaspoon per gallon is necessary to eliminate any chance of refermentation. |
