Kitosol 40 (FIN510) is an impressive wine clarifier that has become increasingly popular over the last few years in Europe, Canada and now the U.S. It has proven itself to be very effective in clearing even the most troublesome hazes. It works by creating strong negative and positive static charges in the wine, which promotes the clumping and the falling out of yeast, proteins and the break down of haze causing substances. This product is very effective and highly recommended. Each package contains enough to clear 5 or 6 gallons of wine.

Directions: Siphon wine off any sediment before beginning. Gently stir into the wine the contents of packet #1 (on the left), and then gently stir in the contents of packet #2 (on the right). Continue to stir the wine until both ingredients are evenly dispersed throughout the wine. Allow the wine to clear for 3 to 5 days. Once wine has cleared, siphon off the rest of the sediment and it will then be ready to bottle.

Ingredients: Sterile water, kieselsol (CAS 7631-86-9) and chitosan (CAS 9012-76-4)

While putting in a pouch of Kitosol 40 I was reading a warning on the back about the Chitosan being made from shell fish? Now I have used this several times in the past with seemingly no problem however my wife, (who is my best wine fan) is allergic to shell fish. Can you tell me if this Chitosan is removed and safe after it clears out the wine and is racked off for bottling or is it still unsafe for my wife?
This question has been addressed in Winemaker Magazine by Alison Crowe in the Jun/Jul 2008 issue. The article can currently be found at the following link The article states "from what I understand, seafood allergies derive from proteins in crustaceans and shellfish, not from materials in their shells. Chitosan is a manufactured product that is derived from chitin in the shells, a natural polymer. During the manufacturing process, the shells only (no fleshy protein bits) are used, and any protein that could possibly be clinging is removed. Chitosan is a great flocculating agent in wines. It precipitates solids and is a very efficient clearing agent - basically you add it to your wine, it gloms on to solids and then falls out of solution to the bottom of your container. If you rack cleanly enough (which means giving the solids plenty of time to settle) you should be able to leave the chitosan fining agent, plus the tannins and wine proteins it pulled out, behind in your container."

I have, in the past, used every clarifier that is made to clarify various white varietal grape wine. All, and I mean all, have not been consistent with results except this product. And the process is quite simple. The only other method that comes close for me is to filter the batch.

I used a variety of clarifiers when I started wine making, The results were not always good. This is the sure fire way for me to have a crystal clear result every batch. A two part system that takes a short time for visual clearing of the wine. A few days later it's ready for bottling.

I've used this clarifying agent with good success. I use the bentonite clay slurry and part one together and add part two the next day. Usually in three days the wine is clear.

I made persimmon wine from wild Missouri persimmons. It was an ambrosia-like wine, but slightly cloudy from the tannins of the persimmons. The Kitosol was a miracle - it cleared my persimmon wine and even when chilled, the clarity remained. No difference in the flavor. I will use again for tannic or pectic wines.

Worked pretty well on my peach wine. Took about 2 weeks, after a month there was still a very slight hase. More time may work to finish the clearing process. Will see.

Of course, the best way to fine wine is to just let it age for about a year before bottling. But, when you are in a hurry and can't wait, Kitosol 40 is the way to go. I find it best to wait 24 hrs before adding Part 2. Though the instructions do not say so, I find Part 2 works better if first mixed with about a half cup of warm water. I then stir everything about every six hours for the next day. In less than a week, all solids have settled to the bottom, leaving the clearest wine you will ever see.
