Red Start Wine Yeast (WY110) has been isolated from different parts of the world including California, Germany, and France. They are packaged in 5 gram sachets that are sufficient for making up to 6 gallons of wine. The Red Star Montrachet Wine Yeast is an all purpose yeast with a neutral flavor and is also an active dry yeast used by many major wineries for making wines from fruits, berries, flowers, vegetables and grapes. This yeast has a firm sediment and good alcohol tolerance.

I used the Montrachet in both of my 2 batches of Plum wine this Summer of 2014. The recipe called for 9 pounds of sugar. Thus, I used 12 pounds in #1 batch and 16 pounds of sugar in #2 batch. I call #1 batch wine and #2 batch schnapps because it's so syrupy. Everyone who has sampled the batches love the syrupy schnapps-wine the best. I started on August 1st with the juice, squeezing open each plum and boiling in water. I used pure juice and needed to add no water at all. When the yeast showed up in the mail a couple weeks into the process, it was the perfect time to add to the juice and additives (wine tannin, Campden tablets and such) and the mixture began to bubble and I burped it and stirred it often, as it was so full, my five pound frosting buckets from Walmart overflowed many times with juice all over the kitchen floor. This, however, was not a problem once the tasting began. I will be bottling it as soon as I obtain more bottles. It sure is good and seldom lasts til Christmas. Mmm Mmm Good

I'm not very experienced, but at one point bought a different yeast from a local supplier. FAIL! I have gone back to ordering this yeast from EC Kraus and I can just tell by the action that things are as they should be.

Have used this yeast for approx 10 years making 'hillbilly wine' from about every kind of grape or fruit.
