Campden Tablets
Some home
wine recipes require the use of Campden Tablets. Campden
Tablets contain sodium metabisulphite and release sulphur
dioxide which acts as a sterilant & antioxidant. In other
words, they are a pretreatment for fresh fruits and juices
used in wine making. In wine making these tablets will
kill any wild molds or bacteria in the fruit that might
cause off-flavors in a finished wine. Campden Tablets are
added directly to the fresh fruits and juices 24 hours
before adding the wine yeast, allowing them to vent off
before the fermentation process begins. These tablets
increase the purity and flavor of your homemade wine.
Campden Tablets are also used in stronger doses with water
as an equipment sanitizer. Use on fermenting vessels,
hydrometers, wine bottles, hoses or any other glass,
plastic or wood that comes into contact with your wine.
Being sanitary is one of the keys to great home wine
making. Four crushed Campden Tablets to each quart of
water makes a good sanitizer. Just follow the directions
provided with the Campden Tablets.
