Description

Irish Ale Wyeast

WY1084

Species : Ale
Fermentation Temp Range (°F) : 62-72
Apparent Attenuation Range (%) : 71-75
Flocculation : Medium
Alcohol Tolerance : 12%

Pitching/Fermentation : This versatile yeast ferments extremely well in dark worts. It is a good choice for most high gravity beers. Beers fermented in the lower temperature range produce a dry, crisp profile with subtle fruitiness. Fruit and complex esters will increase when fermentation temperatures are above 64°F (18°C).

Notes : It produces a slight hint of diacetyl, balanced by a light fruitiness and slight dry crispness.

Best Styles : American Barleywine, Baltic Porter, Dry Stout, Foreign Extra Stout, Imperial IPA, Irish Red Ale, Oatmeal Stout, Other Smoked Beer, Robust Porter, Scottish Export 80/-, Scottish Heavy 70/-, Scottish Light 60/-, Spice, Herb, or Vegetable Beer, Strong Scotch Ale, Sweet Stout, Wood-Aged Beer and a very interesting pale ale.

Want to make a Yeast Starter? Home brewers are always led to believe making a yeast starter is for the advanced brewer. This could not be further from the truth. If anything beginning brewers should start with yeast starters. When you think about it they are nothing more than a small extract brew. Show Me How To Make A Yeast Starter

Still waiting for the final results.

My initial gravity was 1.055. The yeast activated quickly and was bubbling like crazy for the first three days or so. It has been in the primary fermenter for about 10 days now. I re-checked the gravity, and it is 1.025. I am hoping for a final gravity of 1.014 or so. Hopefully the yeast can get me there. The aroma and flavor of the beer is good albeit that I haven't really been able to taste the final product yet.

Speedy Ferment

I used this yeast in making my Dusty Mud Irish Stout (a Charlie P recipe) and I must say it was completely fermented in under 4 days, probably the fastest ferment activity I have experienced. The result was a great tasting stout.

Great for Irish ale

It works very well and really makes a difference in the subtleties in taste. I often substitute the dry yeast, but haven't been happy in flavors. My last 10 gal batch I purchased this for a chocolate coffee porter and it made a big improvement.
