(BY640-1007) This is a very flexible liquid beer yeast. It is most suited for the stronger, maltier Scottish Ale, but has been found in favor for any beer that is rich, smokey flavored or a beer that is seeking higher alcohol levels. This yeast's ester production is considered average, but can be increased with slighty warmer fermentation temperatures.
